🥔These roasted salt & pepper turnips will remind you of chips – but they’re a healthy alternative! 

They’re a great change of pace – try it with a burger, chicken, or beef. 

🌟Salt & Vinegar Turnips 🌟

(serves 4)

  • 2 lbs (900 grams) turnips, peeled and cut into 1-inch wedges
  • 4 cups (950 ml) water
  • ½ cup (120 ml) apple cider vinegar (plus extra for serving)
  • 3 Tbsp extra-virgin olive oil 
  • 1 tsp sea salt
  • ½ tsp freshly ground black pepper.

In a large pan, combine the turnips, water, and vinegar in a medium pan over medium-high heat. Bring to a boil, cover, and reduce heat to medium-low and simmer until the turnips are tender, about 10 minutes.

While the turnips are cooking, preheat your oven to 450ºF/230ºC. 

When the turnips are done, drain them well and place them in a large bowl. Add the olive oil and half the salt and stir to coat the turnip well. Pour onto a large rimmed baking sheet, spreading the turnip wedges out so they are in a single layer.

Place in the oven and roast for 10 minutes, stir, and then roast for an additional 10 minutes until they are golden brown (total of 20-25 roasting time).

Toss the turnips with 1 Tbsp of vinegar and the remaining salt. Serve and enjoy!
