Stuffed Cabbage Soup 🥬

👩‍🍳Hello comfort food! I’ve got a tasty, filling, and nutritious recipe for you today featuring this week’s food: cabbage.

It contains all the satisfying flavors of stuffed cabbage without the time and effort.

Plus: it’s a full meal in a pot! 

🥬Stuffed Cabbage Soup 🥬

(makes 8 servings)

  • 2 Tbsp olive oil
  • 1½ pounds lean ground beef or turkey 
  • 4 cups (350 grams) chopped green cabbage (about 1 medium cabbage)
  • 1 large onion, chopped
  • 3 carrots, chopped
  • 2 celery stalks, chopped
  • 1 Tbsp Italian seasoning
  • 1 tsp sea salt
  • ½ tsp ground pepper
  • ¼ tsp hot sauce
  • 14 oz (396 grams) can diced tomatoes 
  • 14 oz (396 grams) can crushed tomatoes
  • 3 cups (700 ml) low-sodium chicken or beef broth 
  • ½ cup (90 grams) uncooked brown rice

Heat the olive oil in a large soup pot over medium-high heat. Add the beef/turkey and cook, stirring often until it’s cooked through, about 6 minutes. 

Add the cabbage, onion, carrots, and celery, and cook until the onion softens and begins to become translucent, about 5 minutes – stir often.

Add the Italian seasoning, salt, pepper, and hot sauce. Stir in the tomatoes and broth and bring to a boil. Stir in the rice and reduce the heat to low. Cover and cook until the rice is done, about 35 minutes. Taste and adjust seasonings before serving.
